In the past Aizu domain (present-day Fukushima Prefecture), an open-air potluck known as "Mushroom Mountain" started to take place. This event has its roots in a traditional harvest festival and is considered to be one of the origins of the taro stew tradition in Fukushima. The main ingredients in Fukushima Imoni taro stew are seasonal vegetables and miso.

Kozuyu is a local Aizu stew made from various dried marine products. It is a traditional dish that became popular during the Edo period and lasted until the late Meiji period as a delicacy for the samurai households of the Aizu domain and the local people. Our Kozuyu Gratin is a modern interpretation of this classic dish.

The Aizu region's classic "katsu-don" (pork cutlet over rice) is a beloved dish topped with a thick sauce. A local soul food that has been popular for hundreds of years, this freshly fried pork cutlet is marinated in sweet and spicy original sauce and served on a bed of rice with cabbage on top.

"Kozuyu", a local dish of Fukushima Prefecture, is a soup that was born as a feast dish of Aizu. It is a traditional dish that is served on New Year's Day or Halle Day. It is characterized by a thin flavor of vegetables such as bean fu, carrots, shiitake mushrooms, and taro.
